    🌈Cookies Like a Rainbow

    Homemade fortune cookies taste way better than store bought! I decided to change up plain looking fortune cookies and make them look like rainbows. I love you colourful they are! You can choose whichever colours you like - use only a few colours, or do all 7 colours of the rainbow.

    These are really easy to make, but they do take a bit of time. You can only bake 2-3 at a time, because you need to be quick to fold and form them. And they are also hot to work with. I don't suggest children assisting with this recipe.

    🥘Ingredients Needed for this Recipe

    Ingredients needed to make rainbow fortune cookies.

    Ingredient Notes

    • Unsalted butter - You can substitute with salted butter. Leave out the extra salt in the recipe.
    • Food colouring - I suggest to use gel food colouring. Liquid food colouring will not give you strong colours.

    🔪Instructions

    Add egg whites and sugar to a large bowl. Whip on high speed for 2 minutes until the eggs are frothy. Add butter, vanilla, water, and salt, and mix until combined. Add flour and mix until combined.

    Divide batter into one bowl for each colour you are using. Add food colouring to each bowl, a bit at a time, until you get the shade you prefer.

    Place each batter colour into piping bags and cut off about 3mm at the ends. Alternatively you can place the batter in ziplock bags and cut the corner off. Pipe 3-inch circle outlines onto a parchment lined baking sheet with one of the batter colours. I have a template to use as a guide here.

    Pipe the rainbow stripes within the circle, alternating colours. Repeat with another 1-2 cookies. I don't recommend baking more than 3 cookies at a time, as you need to be quick in forming them when they come out of the oven.

    Bake at 350°F (180°C) for 7-8 minutes or until the edges are slightly golden. If you undercook, the cookies will be too soft to form. If you overcook, they will be too hard to form. Quickly remove cookies from the oven. Flip one over, and fold it in half, pinching only the top closed. Don't pinch the sides. Insert a fortune then place cookie on the rim of a cup to shape it into a fortune cookie. Repeat with the remaining cookies.

    ✔️Expert Tips

    • Use a circle template when piping the circles out. You can download and print mine here. Place the template under the parchment paper and pipe out the circles. Don't forget to remove the template before putting the cookies in the oven.
    • Choose whichever colours and however many you want to use.
    • Gel based food colours will give you vibrate colours. I recommend gel food colours instead of liquid food colours.
    • Only bake 2-3 cookies at a time. You need to work fairly fast when they come out of the oven to mold them.

    💭FAQ's

    How to tell when fortune cookies are done baking?

    Fortune cookies will have a slightly golden edges when done. If they are underdone, they will be too soft to mold. If they are overbaked, they will be too hard to mold. The first few cookies you bake will be trials to test out the perfect timing for them.

    Can I freeze homemade fortune cookies?

    Yes, store in an airtight container and freeze for up to 3 months. Thaw at room temperature overnight.

    Ingredients
      

    • 3 large egg whites room temperature
    • ¾ cup granulated sugar
    • ½ cup unsalted butter room temperature
    • ½ teaspoon vanilla extract
    • 3 tablespoons water
    • ¼ teaspoon salt
    • 1 cup all purpose flour
    • food colouring

    Instructions
