    🫓A semi-sweet focaccia bread

    I have a focaccia bread on my website already, but came across apple fritter focaccias. A salty focaccia with a sweet apple pie filling in the middle? It was surprisingly really good! If you like salty and sweet, this ones for you!

    The tender yeasted dough sandwiches a sweet apple cinnamon filling. Then the bread is topped with a vanilla glaze. This would be perfect for breakfast or brunch. It has a slightly sweet cakey feeling that feels like breakfast food.

    🥘Ingredients

    Ingredients needed to make this recipe.

    Ingredient notes

    • Oil - I used vegetable oil in this recipe. You can use any unflavoured oil.
    • Apples - Honey Crisp, Pink Lady, Granny Smith, Braeburn are all good apples to bake with.
    • Lemon juice -Tastes way better freshly squeezed.
    • Brown sugar - Either light or dark brown sugar can be used.
    • Milk - Whipping cream can be substituted as well.

    🔪Instructions

    Focaccia Dough

    To make the dough, mix yeast and warm water together in a large bowl. Let it sit for about 10 minutes, or until the yeast starts frothing.

    Add the flour, salt, oil, and honey to the bowl and mix until combined. Cover and store in the refrigerator overnight.

    Apple Pie Filling

    Combine butter, apples, sugar, lemon juice, cinnamon, and salt in a medium saucepan. Cook on medium heat until the apples begin to soften.
    Add flour and cook until filling thickens, about 1-2 minutes. Remove from heat and let it cool until room temperature.

    Assembly

    Take the dough out of the refrigerator to warm, 2 hours before making this recipe.

    Grease a 9-inch round baking pan and line the bottom with parchment paper.
    Divide dough into two. Place one half of the dough into the baking pan. Use your fingers to push dough out to the edges of the pan as best as you can. If dough doesn't want to relax, let it sit covered for 15 minutes, and try again.

    Spoon apple filling over dough, leaving a ½-inch border from the inside edge of the pan. Top filling with the remaining dough. Use your fingers again to push dough out to the edges of the pan, fully covering the apple filling.

    Bake for 25-30 minutes at 450°F (230°C), or until the top of the bread is golden. Let rest at room temperature until cooled.

    Glaze

    Mix powdered sugar, salt, and vanilla in a small bowl. Add milk, 1 tablespoon at a time, until you get a thick glaze. You want it to be pourable, but not too thin that it will run off the top of the bread. Add more powdered sugar if it's too thin and more milk if it's too thick.

    Decorate the top of the bread with glaze. Serve at room temperature

    ✔️Expert Tips

    • Pick apples that won't get too mushy in this bread. Honey Crisp, Pink Lady, Granny Smith, Braeburn are all good apples to bake with.
    • You can make the apple pie filling up to 3 days before making this recipe.
    • Add ½ teaspoon cardamom to the apple pie filling if you like that spice.
    • Make sure there isn't any pockets of dry flour in the dough after mixing the ingredients together. Mix until everything is combined.
    • You can also make this in a square pan. Either 8 or 9 inch pan will work.

    💭FAQs

    Can I make this ahead of time?

    The recipe for the dough is already an overnight dough.
    You can also make the apple pie filling up to 3 days in advance.

    Can I freeze this?

    I don't recommend freezing this recipe. The apple pie filling would get too mush on thawing and would seep into the dough too much.

    Glaze
