    Easter Bunny Coconut Tails

    Easter Bunny Coconut Tails are a fun, no-bake Easter treat made out of sweetened condensed milk, melted butter, almond and vanilla extract, and of course, coconut! Hand dye the coconut flakes in pastel shades for a perfect spring treat!

    🐇A fun treat for Easter

    These Easter bunny coconut tails are an easy, no-bake dessert. The mixture is made all in one bowl. It needs to chill in the refrigerator for only 15 minutes while you hand dye the coconut flakes. I used pink, yellow, and blue, but you can use whichever colours you choose. Just make sure to use liquid food colouring. Gel food colouring will clump and not mix well.

    These are so fun to make with children like this recipe too! I formed the mixture into balls, and my 5 year old daughter rolled them in the coloured coconut flakes.

    Ingredients needed to make Easter bunny coconut tails.

    Ingredient notes

    • Almond extract - You can leave that out if you like. Don't substitute it with more vanilla. Just leave it out.
    • Liquid food colouring - Gel food colouring will not dye coconut flakes well. Liquid food colouring does the best job of distributing the colour.

    🔪Instructions

    To make Easter bunny coconut tails, combine sweetened condensed milk and melted butter in a large bowl. Add vanilla extract, almond extract, and powdered sugar, and whisk to combine.

    Add 4 cups of coconut flakes and use a large spoon to mix until the coconut flakes are well mixes in. Cover the top of the bowl and place it in the refrigerator for at least 15 minutes or up to 2 days.

    Divide the remaining 2 cups of coconut flakes into 3 bowls. Add 1-2 drops of liquid food colouring in the first bowl, and mix well until the colour is distributed. I used a stand mixer with a paddle attachment to mix. Repeat with the remaining bowls using other colours of liquid food colouring. If using a stand mixer, wipe it out after each bowl of coconut flakes have been mixed to avoid colours mixing.

    Remove coconut mixture from the refrigerator. Roll into 1.5 tablespoon sized balls. Roll balls into coloured coconut flakes and place on a parchment lined cookie sheet. Chill coconut tails in the refrigerator for at least one hour before serving so they can firm up.

    ✔️Expert tips

    • Chill the mixture for 15 minutes at least. It's way easier to roll the mixture into balls if it's chilled.
    • Use liquid food colouring to dye the coconut flakes. Gel food colouring clumps and doesn't distribute the colour nearly as well.
    • Make sure to chill the finished coconut tails in the refrigerator for at least 1 hour so they can firm up.
    • Store Easter bunny coconut tails in the refrigerator in an airtight container.

    💭FAQs

    Can I make these ahead?

    Easter bunny coconut tails will last in the refrigerator for up to 5 days.
    You can also make the mixture a day or two ahead of time, and roll them later.

    Can I freeze them?

    I have not tried freezing them, but I don't think they would thaw very well. I worry they would be mushy.
