Perfect  Pumpkin Pie

This is the most perfect pumpkin pie recipe! The pie crust is super flaky, and the pumpkin filling is perfectly spiced. A truly great pie for fall!

           pumpkin puree            large eggs            packed brown sugar            granulated sugar            cornstarch            salt            ground cinnamon            ground ginger            ground nutmeg            ground cloves            ground pepper            evaporated milk

Combine pumpkin puree, eggs, and sugar.  Add cornstarch and spices. 

Stir in evaporated milk

Pour filling into par-baked pie crust.  Bake it in a 350°F oven until the center is still a bit jiggly, 55-60 minutes.

The filling will look poofed up when it comes out of the oven, but don't worry.  It will settle nicely as it cools

Allow the pie to cool completely, about 3 hours, before cutting into it.  Serve warm or cold
